Mango Lassi Breakfast Bowl

This couldn’t be more delicious, especially if mango is one of your favorite fruits, like it is mine. It’s also really easy to make!

It’s basically a mango lassi, a bit thicker, thrown in a bowl and topped with delicious fresh fruit, toasted cashews and coconut. And the greek yogurt adds protein to the mix. This breakfast will surely be a good start for your day .

Mango Lassi Breakfast Bowl Recipe

  • Servings: 1 large smoothie
  • Difficulty: easy

Ingredients:

For Lassi:
1 fresh mango, or 1 cup frozen
1/2 cup greek yogurt
1/4 cup vanilla almond coconut milk
1 tsp ground flaxseed (optional)
1 tbsp lemon juice
1 tsp of honey or choice of sweetener
1/2 tsp cardamom powder or rose water or pinch of saffron (optional)

Toppings:
fresh fruit (such as mango, strawberries, blueberries, banana)
toasted coconut flakes or toasted shredded coconut
toasted or roasted cashews

Directions:
Set aside some of the mango for topping and blend all of the lassi ingredients until smooth.
Pour in a bowl and top with all your desired toppings.

Notes: you may substitute the greek yogurt with vegan coconut yogurt, banana, or ice to achieve creaminess. You may also use your choice of milk and add more sweetener if you wish.

  1. Mango’s probably my favorite fruit! We used to eat them all the time in South Pacific–so many ripening all at once no one on the islands could pick them all before they fell. Too bad they’re a bit hard to get in Northern Europe… Think I’ll might try it with bananas 🙂 Do you think that could work?

      1. Thanks! Both sound good. The strawberries here are wonderful when they’re in season–they come up from Italy and Spain which aren’t far so I don’t feel bad about buying lots!
