2  15 oz. cans of chickpeas/garbanzo beans, drained & rinsed
2 tbsp extra virgin olive oil
2 tsp chili powder
1 tsp smoked paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp sea salt
juice of 1 lime
lime zest (optional)

Directions:
Preheat the oven to 450 degrees F.
In a large bowl combine the chickpeas, olive oil, lime juice, and spices. Mix until well coated.
Place the chickpeas in a single layer on a lightly oiled baking sheet for 15-20 minutes. Check after 10 minutes if they’re lightly browned and crisp, shake or toss once. Remove from the oven when ready, sprinkle with lime zest and enjoy!

Leftovers don’t stay crisp. You can try to recrisp them in the oven for a few minutes.

I’ve been scouring the internet for a quick and easy recipe for this evening and couldn’t find anything so I had a quick read of my blogs while debating whether to call for a take-away or go to the supermarket, but I’ve got all the ingredients for this in the cupboard! I’ll let you know how it turns out 🙂
