Cilantro Lime Hummus

Enjoy this Mexican twist on the traditional hummus with crackers, veggies or in a sandwich. Bring it to your next dinner party if you want to please everyone.

Well, everyone except those who hate cilantro, which seems to be a big bunch. I don’t know anyone personally though.

It is very easy to make, just blend all the ingredients together!

I used my nutribullet to make it since I don’t have a food processor.

Cilantro Lime Hummus Recipe

Yield – 1 1/2 cups

Ingredients

1 15 oz can of chickpeas (garbanzo beans), rinsed and drained

1/2 cup cilantro with stems

2 tbsps extra virgin olive oil

2 tbsps water

3 tbsp lime juice

3 tbsp tahini paste (here’s how to make your own)

2 garlic cloves, chopped

1/4 – 1/2 tsp kosher salt

1/8 – 1/4 tsp cayenne

Directions

In a food processor or blender combine all of the ingredients and blend until smooth.

Serve with crackers, veggies or on toast!

  1. Looks good. Hummus seems to have come into fashion a little bit here in DF! Fair to say I’ve been binging on it quite a lot in-between taco campechanos. I might have to give this a try 🙂
