If you are unfamiliar, agua fresca literally means “fresh water” and it is a typical drink in Mexico made from all kinds of different fruits and often sweetened. The most popular ones, which you may have seen at Mexican food joints, include horchata, jamaica (hibiscus) and tamarindo.

  • Print

Ingredients:ย watermelon fresca5
2 cups of chilled watermelon
5 large basil leaves
3 ice cubes of frozen light coconut milk, or about 1/4 cup chilledย (I used Trader Joe’s canned light coconut milk)*
4 mint leaves (optional)
sweetener of choice to taste (optional)
2 tsps lemon juice (optional)
pinch of salt to bring out the sweetness of the fruit (optional)
A splash of cold water

Directions:
Blend all of the ingredients together until smooth (I use my trustyย nutribullet), serve in a chilled glass and enjoy!

Notes: you may leave out the coconut milk altogether and have a simple and delicious basil watermelon agua fresca, it will also look prettier! You may also sub the coconut milk cubes for water cubes for a chilled and frothy effect.
